Best ever Crunchy Homemade Cereal



















Our kids are big breakfast eaters. As babies they happily gobbled up big bowls of porridge in Winter and Birchermuesli in Summer. While the boys happily eat oats everyday, Miss E demands a bit more variety. The occational poached egg or french toast keeps her keen tastebuds happy. But the boys.....give them oats any day. Just like papa. Me? I need variety in cooking as well as eating so I am always hunting for a new recipe.

Now I've tried a few crunchy muesli varieties and I must admit I do have a weakness for something crunchy and sweet. Chewing on plain oats and milk just does not cut it....sorry. The commercial crunchies are too sweet and often full of dubious addidives. I have also been known to import a super crunchy one from the land of muesli, Switzerland. Then I have experimented with some recipes but nothing quite did it in the long run. Until I stumbled upon an new cookbook in the Library. And that was it. Easy to prepare in larger quantities, not too sweet and sticky, full of healthy stuff and full of possibilities. So here it goes, our new favorite start to the day:

Crunchy Homemade Muesli

3 cups of rolled oats
2 cups of Sultana Bran
1/2 cup unprocessed oat bran
1/2 cup flaked Almonds

optional extras: Sunflower seeds, Pumkin seeds, Seseme seeds, shredded coconut.
About a handful of each or more of just one addition

80 ml unsweetend Apple Juice
2 tbs floral honey
1/2 tsp cinnamon
Add cranberries, more sultanas, paw paw or banana chips

Serve with Milk, Soy or plain Yoghurt.

Combine oats, Sultana bran, Oat bran and Almonds in a big bowl. Heat Apple Juice with honey and cinnamon until honey is melted. Then, mix juice through oats until well combined and spread on a baking tray.
Toast for about 30min in a hot oven (200C), mixing with a wooden spoon once or twice. Once its golden brown, take it out and let it cool in the tray. Add the optional dried fruit or other favorites and pour into an airtight container.

Stays fresh for about 1 months. My mix only lasts for about 4 days....
